the BREWERY
Brewhouse
The 15bbl brewhouse has the capacity to produce 465 gallons of beer per batch. This is the equivalent of 30 1/2 kegs per brew. A steam boiler provides heating by circulating steam through the jacketed kettle, mash tun and hot liquor tank.
Control Panel
A central control unit will be the interface between the brewer and the brewing system. All data from flow meters, thermocouple probes and status indicators of valves and other equipment are displayed on this panel. Pumps and motors can be activated and speeds can be adjusted.
Fermentation Vessels
Our fermentation hall will consist of stainless steel tanks, which have a conical bottom and a cylindrical top. The angled bottom will allow the yeast to flow towards the cone's apex for harvesting after fermentation is complete. Typical primary fermentation time is 4 - 7 days.
Glycol System
Propylene glycol (antifreeze) is cooled to 28 deg F in the chilling units and pumped in a loop between a glycol holding tank, the fermenters and brite tanks. A separate temperature controller is attached to a cooling solenoid and temperature probe on each tank. The temperature controller automatically activates the solenoid valve on demand for cooling.
